TOLAHCHEFS: Meat Free Alternatives

These two options are for those days when you feel like taking a break from meat. As always, quick and easy but loaded with flavour! You can also use these as sides when you prepare a meat dish. From the preparation counter to the plate in 30 minutes max.

Option 1: Chickpea Waldorf Salad

Ingredients:

1/2 cup plain full-fat yogurt                                         2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard                                            1 teaspoon honey
1/2 teaspoon fine sea salt                                            1/2 teaspoon crushed red pepper flakes
1/4 teaspoon freshly ground black pepper           1 (14-ounce) can chickpeas, drained and rinsed
2 ribs celery, finely chopped                                       1 medium apple, chopped into 1/4-inch chunks
1 cup red grapes                                                               1/2 cup diced red onion
1/4 cup chopped parsley                                              1/2 cup walnuts, roughly chopped
4 cups fresh spinach
Method   
                                                                                                                          
  Prepare the yogurt dressing by combining the yogurt, apple cider vinegar, mustard, honey, salt, crushed red pepper flakes, and pepper in a bowl. Whisk until well-combined. Combine chickpeas, celery, apple, grapes, onion, parsley, and walnuts in a large bowl. Stir in the dressing and toss until evenly coated. Refrigerate for about 30 minutes before serving.

Option 2: Zingy Wild Rice Combo

Ingredients:

1 small onion, diced                                               1 TBS butter                                                     

2  cups cubed butternut squash                                  ¼ tsp. dried thyme                           

2 cups cooked wild rice                                          1 cups chopped apples                                                                      2 TBS butter/cream                                                 

½ cup grated parmesan cheese                                

Salt and Pepper to taste                                            2 handfuls baby spinach

Method:                                                                                                                                                                            
 Sauté* onion and butter in a large skillet. Add squash & thyme and cook for a further 5-8 minutes, just until the squash is tender but not mushy. Add wild rice*, baby spinach and cream/butter and stir to combine. Add apples last (so they stay crispy). Add cheese and stir a few times (to get it melted into the ingredients)

*For this dish, prepare the rice beforehand if you really want to stick to the 30 minute maximum preparation time.
                                                                                                                                                          *Sauté – this means to fry food quickly in a little fat.

International Weekend News.........

Hope you all had a lekker weekend...here's an update on the International scene......

First....news that made us go a bit itjoooo....So Empire star, Terence Howard was in Court last Thursday trying to have his divorce settlement with his ex wife Michelle Ghent thrown out. Apparently Terrence has a sex tape and Michelle is threatening to release it if he doesn't pay up. She is also threatening to release medical information about him that would likely make it impossible for him to continue working in Hollywood. Hee baan!

Wait for it...... The medical information is a taped conversation between the two, with Michelle threatening to tell the world that Terence has an STI...! Bathi Terence broke down in Court whilst describing these threats from his ex wife. Huuuuuu these exes aint loyal shem.....I know we have former pychos in this house lol so my question is, would you have done the same to your ex just to extort money from them? #WeWontJudge

In more couple news, as we know, Kendra Wilkinson and hubby, Hank Baskett are trying to work on their marriage and even joined Marriage Bootcamp. Well, it seems like their problems are worse than we thought..a clip from the upcoming episode shows the results of Kendra's lie detector results and the test revealed that ''deception was indicated'' when she said she had never thought about cheating... Hank on the other side, refused to take the polygraph test, saying he will only go ahead if his lawyer says so.

Opps! There is rumour going around that Lamar ambushed Khloe. Apparently Lamar popped up on her as she was walking inside SoulCycle for an early morning workout and he started screaming and yelling at her,  and he grabbed her arm. It’s reported Khloe screamed as she tried to get away from him and was totally freaked out by the incident. But Lamar is saying that he is fed up with all these lies and if they continue, he will sit with Oprah and spill the beans. Can he just do it and stop with the silly threats!
