#TOLAHCHEFS9: Easy Cupcake Recipes

This is a very basic cupcake recipe for those still mastering the art of baking. You can change the ingredients slightly to make different-flavoured cakes, or add all sorts of icings and decorations so every cake is a mini masterpiece!


Ingredients:
110g butter, softened                                                110g caster sugar 
110g plain flour                                                          2 tsp baking powder
¼ tsp salt                                                                    2 medium eggs
1 tsp vanilla extract

Method:                                                                                                                              
Preheat the oven to 180C. Line a muffin tin with paper cases. Put the butter and sugar in a bowl and beat until pale and fluffy. Sift the flour, baking powder and salt into the bowl. Beat the eggs and vanilla and add to the bowl. Beat until just combined. Spoon the mixture into the paper cases. Bake for 18 to 20 minutes until risen, golden and firm to the touch. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Fillings and Flavour Suggestions
You can add a filling to the cupcake by cutting a cone from the middle of each cake with a serrated* knife. Fill the hole with jam, lemon curd or one of these fabulous fillings.
1.     Raspberry and Chocolate Cupcakes
Fill each cake with 1 tsp seedless raspberry jam and ice with chocolate buttercream.
2.     Lemon Cupcakes
Fill each with 1 tsp lemon curd. Ice with lemon buttercream.
3.     Chocolate Cream Cupcakes
Mix 75g mascarpone with 2 tbsp double cream and quarter tsp vanilla. Put 1 tsp of this in the centre of each cupcake. Ice with chocolate buttercream.
4.    Buttercream Icing Suggestions
  • For plain buttercream, beat 110g butter until soft, then beat in 110g icing sugar, a tablespoon at a time.
  • For vanilla buttercream, add half teaspoon vanilla extract and beat to combine.
  • For lemon buttercream, beat in 1 tbsp lemon juice- add 1 tsp at a time and taste after each addition.
  • For chocolate buttercream, beat in quarter tsp vanilla, 60g melted and cooled milk chocolate and 2 tbsp cocoa powder.

*A serrated blade is a type of blade used on saws and on some knives or scissors, the uneven one with ‘grids’

5.       What quirky habits do you have? I bite chow and swallow my toe nails and  my finger nails.
I talk a lot to myself . I cant stand people sleeping in my bed except my daughter. I smell everything before I eat it

6.       One thing that TOLAH’s don’t know about you? I paint very well ,  I love art .I sold a painting to my father in high school , he still has it in his office

7.       What are your fondest childhood memory? I grew up with my gran, we’d lock the main house , we’d go sit ko ntlwaneng, my gran would  get the fire going , the laughs and joy and happiness  over a meal ya ting ka moro(that water gravy) and  that hard body chicken .....priceless

8.       What’s the most embarrassing thing that has ever happened to you? Lol,  I've  had so many , wait....just had one now I couldn’t spell emphasize , I typed infersize , google couldn’t even help... so useless  !

9.       What’s the one thing you used to do as a child that you wish you could still do? Love my father

10.   What great lesson would you teach your children? I didn’t study much, so I depended a lot on luck and blessings . I haven’t done too badly though I'm very grateful , so I’d emphasize on  education and working hard , di happiness and piece we’ll catch up to you after you’ve received your MBA

11.   Success is?  Growth in all areas of your life ,  sacrifice and persistence

12.   Ultimate goal in life? I want to be a teacher .A school teacher ...kwaaaaaaaaaaaaa,

13.   What is love? I struggled with this  question the most, this word gets  me emotional ,this word has hurt me the most, this word has disappointed me , this word is not respected .Just used

15.   Would you marry for love or money? I'd marry the uncomplicated-  Money

16.   Describe your ideal partner: Older, tall , dark and educated ,hard working yet adventurous, fun , humble and caring  everything I'm not ,a bit of what I am ..not sure if I make sense,. Yin and yang things!!!

17.   Given the opportunity what would you change about yourself and why? Im so lazy , I can never start something and finish it , why...aaarhhh  coz its a fu*cked up trait

Ku bird....kunzima...go senyegile....if its not the Ashley Madison scandal its another celebrity couple calling it quits! We love LOVE here in TOLAH, and we value marriage, so it really saddens us, when every month we report about a separation or a divorce!

Another celebrity divorce!After  5 years of marriage and 11 years being together, Megan Fox is filing for divorce from husband, Brian Austin Green.  Good news for Brian is that, he is certainly to get spousal support from Megan. Brian has not been working since the car accident the stars were involved in last December which triggered a medical condition called Vertigo. Vertigo is a symptom that has major impact on one's balance creating the sensation that the person, or the environment around them, is moving or spinning. These dotis must learn to drink water..and not bottled mineral water but pure water from the borehole!

Well as they say, Life is short, have an affair! RHONY star, Kristen Taekman's millionaire husband is an Ashley Madison subscriber and of course, he first denied the allegations saying he has no knowledge of such. But with his Ashley Madison email address matching his Twitter handle, including the address used  matching that of their residence, it wasn't long before he came clean.Well according to People Magazine, Mr Taekman has apologised ''I signed up for the site foolishly and ignorantly with a group of friends and i deeply apologise for any embarrassment or pain I brought to my wife and family. Singer, Celine Dion's husband Rene Angelil is battling throat cancer and he has a heart-breaking request to his wife. The 73 year old's final wish.....''I want to die in your arms''. Dion told ABC News, ''He cant use his mouth, he cant eat, so i feed him (through tubes) and i feed my kids''.... Ooooohh bethuna...so sad. May God give Celine strength to continue taking care of her loving husband. He has accepted that he is going shem...but who knows? God might perform a miracle.

Good news for Terence Howard...remember we reported about his legal woes with ex wife? well, the Judge has ruled on his favour to have his spousal support agreement thrown out. I am sure those crocodile tears he shed in court helped kiiii. We are happy for Lucious.

Closing Open Doors before You Say ‘I Do’ by Pastor X. Hlitana


When a friend of mine sent me a message on LinkedIn about his latest book called Happily Ever After A Betrayal *we will cover this one next time*, he also included a list of his other books. One particular book extremely caught my attention “Closing Open Doors Before You Say I DO”. All that came to mind was our single dotis and pre’s. I knew from that moment that I had to share this with the family. 


A Brief intro of the Author:
The author is my high school friend Pastor Xolani Hlitana. Remember when I shared with you ladies on “Guest Who” that my high school years were the best ever, and I met the most wonderful and inspirational people EVER? Well Pastor X is one of those people.
Pastor Xolani is a marriage officer and marriage counsellor for the last 8 years. He is married with 3 children and has travelled around the country and overseas doing marriage seminars. He is also a professional marketer. He is one of the people that got straight A’s at school throughout matric. He dedicated his life into ministry and working with the youth in Alexander Township.

I asked him to give us a brief intro of his book. And this is what he said.
“Closing open doors before you say I do” is a book aimed at single people who wish or are in a process of getting married. We all have heavy questions about what is ideal, expect and perhaps the correct processes to follow in getting married. The answers are based on real life experiences and biblical principles. The book covers some controversial questions which are hard to ask openly. We address issues like when is the right time to marry, how do you know he is the right partner, what are the dos and don’ts of courtship etc.

Weekend "Sunday TV" round up...

Idols Top 16 is finally out!


We usually do Sunday TV recap on Mondays but today we are giving a special recap to IDOLS Top 16 of season 11.
  • Amanda Antony (22) from PE, she replaced Nonhle after she pulled out of the competition. I hope her recording company is not going to kill her talent. We have seen talented people getting nowhere due to greedy companies. See her reasons copied from the Idols website below

The moment we have all been waiting for. Some of us couldn’t wait to see some of the contestants go home. Last week I found myself wondering if the judges sometimes regret sending the wrong people home. Like do they ever wonder if the actually winner was on the other bus? Anyway we will have to find out when they choose their top 16. Some of us will be disappointed at their choices and others we will agree with. Whatever happens Lungisa better be on the top 16.

Reema was the first contestant to see the judges. He had a rough group round and redeemed himself on his solo performance. And he made it through!

Shame this Tebogo guy is not cut out for the Idols show. I think I prepared myself for his departure. He can definitely sing but he is not fit enough for the show.

Spamandla that guy with a Joyous Celebration voice from Port Elizabeth also did not make it TJOE! Shame he must try I Think I Can Sing Gospel

Poor Sizwe was also sent home. He crumbled when he got to Sun City. His first audition was the most memorable one but that wasn’t good enough.

The judges for this year decided to have 8 guys and 8 girls for their Top 16.
